The majority of Espers I have thus far worked with have been humanoid. My first successful dissection (the rest dissolved into unstable mana) revealed the same internal organs as a human. This would explain the successful mating of Esper and human. However, an Esper needn't be humanoid, it appears that they are deliberately choosing the forms of dominant predators. In fact, I theorise that an Esper's form needn't be a single coherent body. If one were to create an artificial Esper, with maximisation of magic output in mind, fusing several Espers together is a viable solution.

(See prototype sketch included.)
